Keto key lime bars
Each great bar begins with a solid base. For these coconut lime bars, we use a mixture of coconut flour and either sesame flour, or almonds to create a fragile crust, which completes the filling without being overly dense.
Combine the dry ingredients – the flour, the chosen sweetener and a high salt note. Then cut into coconut oil until the mixture is raw.
This creates that perfectly similar texture. Press this in the prepared baking vessel; The parchment paper is your friend here for a slight removal later. A quick baking in a preheated oven sets the scene for the delicious filling.
While the crust is baked, the star of the show: the vibrant lime filling. This is really the tropical magic.
You will beat the eggs, fresh lemon juice and a lot of lime peel for that bright essential aroma. Add the sweetener to your choice and a hint of coconut stevia to improve that tropical note.
Once the crust is ready, pour this smooth and zesty mixture over the warm base. A splash of unwanted coconut flakes on top add another layer of texture and aroma.
