Customizable Ratatouille Recipe

My low carbohydrate version of this recipe eliminates eggplants and peppers, especially because I have to avoid histamine foods. While you can see the tomatoes here, which is also a histamine rich food, I simply removed it from my plate when I served it.

  • 12 ounce Rome Tomato
  • 3 TBSP extra virgin olive oil divided
  • 1 Tsp chopped garlic
  • 1/2 Tsp Herbs de Provence or a mixture of thyme, rosemary and oregano
  • 1/2 Tsp salt
  • 1/2 Tsp pepper
  • Optional: Parmesan shaved
  • Preheat the oven to 375 degrees F.

  • Slice the pumpkin, pumpkin, onion and tomatoes about 1/8-1/4 inch. Put aside.

  • Brush 1 tablespoon oil in a 9 -inch cast iron pan or a round plate. Layer slices of vegetables in a spiral around the pan.
