I love a hearty meal in a pot, and soup is a great place to pack a wide variety of colorful vegetables. This hearty, vegetable-filled soup with Italian sausage is a nice change from the usual, and one I make whenever the weather is cool enough.
This year’s goal: Freeze garden squash (which is always plentiful) so you can make this soup year-round, keeping it local and organic (on the cheap!).
Hearty Italian sausage soup loaded with vegetables
Foods that can be cooked and served in one dish are my favorite. Soups are usually this type of food. (Do a happy dance for fewer dishes!) The key to getting any one-pot meal is to pack in lots of veggies and a good protein.
For the vegetables in this soup, I use zucchini and yellow squash from the garden, because I always have more of these than I know what to do with! I also add canned Italian stewed carrots and tomatoes. Finally, I throw in some fresh spinach right at the end. If this combination doesn’t appeal to you, you can absolutely change some of them, but my crew loves it.
If I’m feeling ambitious and don’t mind a few more dishes because I didn’t make a huge mess preparing dinner, my coconut flour crackers go really well with this soup.
Hearty Italian Sausage Soup Recipe
One of our favorites, a colorful soup with Italian sausage and bone broth.

In a large pot, brown the sausage until almost cooked.

While it’s cooking, mince the garlic, slice the carrots and zucchini and yellow squash.

Add the minced garlic to the sausage and cook for another minute.

Stir in the broth, tomatoes and carrots.

Boil for 15 minutes.

Add the zucchini, yellow squash, black pepper and onion salt and simmer for another 10-15 minutes.

Turn off the burner and add the spinach.

Stir and wait 5 minutes for the spinach to wilt.

Serve and enjoy!

If your family likes a little heat, try using spicy Italian sausage! Also, feel free to vary the vegetables based on personal preference.
