Ingredient notes

- Pineapple rings: We use canned pineapple rings. Drain to remove excess moisture before use!
- Maraschino cherries: Drain these cherries before putting in the pineapple ring.
- Brown sugar: Separately in two parts: 3/4 cup for dough and 1/2 cup for the created pineapple.
- Butter: If you only have to handle, add only 1/2 teaspoon to dough. Make sure it is softened at room temperature before cream.
- Vanilla extract: The pure vanilla extract offers the best aroma, but the imitation of vanilla works.
- Eggs: Use large eggs at room temperature for easier mixing.
- Flour for all purposes: Glind with ordinary flour for all purposes. Bread flour can work too.
- Baking powder and baking soda: Check the expiry date to ensure a correct dosage.
Dark brown sugar vs lightweight
Closed brown sugar has a higher molasses content compared to open brown sugar, which intensifies its aroma and adds additional humidity. Closed brown sugar reaches a deeper wealth similar to the caramel and a more chewed texture. And the cookies get to remain soft only a little longer.

Pineapple confused
Candy-enter pineapple in these cookies is a crucial step that you will not want to jump. Brown sugar and natural fruit sugars work together for caramelization, offering that golden brown color and a delicious aroma, warm caramel.
After placing the pineapple rings and cherries on the parchment paper, sprinkle a tablespoon of brown sugar on each ring. Do not worry if you add a little too much and some brown sugar flows on the sides. This gives you a cute, crispy, crispy caramel on the outside, which we are not upset!
