For the past two weeks, well, Mother’s Day to be exact, I’ve been walking around our property upside down looking for mushrooms. Morel mushrooms to be exact. 🍄
Around these parts, they should start showing up around Mother’s Day (God’s gift to Montana moms)😉. I’m surprised I didn’t run into a bear because that’s how I was intent on finding these highly prized mushrooms.

🔖 Ingredients and substitutions
- Eggs: You can use either fresh eggs or freeze-dried eggs for this recipe.
- Mushrooms: I used about ½ cup morels, however if you have more feel free to add more. What if you don’t have morel mushrooms? You can still make this recipe using other varieties of mushrooms.
- Bacon: The rendered bacon fat is used to cook the rest of the ingredients. If you’re substituting turkey bacon or low-fat sausage, you’ll need to add butter or olive oil.
- Potatoes: If you don’t have potatoes, you can use frozen fries, hashbrowns, or tater tots instead.
- Creole spices: Creole seasoning can be substituted with sea salt and black pepper or any other seasoning you like.
- Cheese: Instead of cheddar cheese, try a Mexican blend or Colby Jack cheese.
- Serrano peppers: Serrano pepper is optional but recommended if you like spicy food.
- Salsa or hot sauce: I like to have scrambled eggs with cheese Fire Roasted Salsa but Salsa Pace Picante or your favorite hot sauce can also be used.
🍳 How to make an omelette with cheese
Step 1: Start by chopping the bacon and vegetables. Next, add bacon, onion, and potatoes to a cast iron skillet or large nonstick skillet. Season with half of the Creole seasoning. Cook for 5-10 minutes or until the potatoes begin to brown and the onions begin to caramelize.






Step 2: Add morel mushrooms, serrano peppers and garlic. Continue to cook over medium heat for another 5 minutes or until the bacon is crisp and the potatoes are cooked through.






Pro tip: Potatoes take the longest to cook. If you can easily cut through the potatoes without resistance, they are fully cooked.
Step 3: Turn off the stove and add eggs to a measuring cup or medium bowl. Sprinkle with remaining Creole seasoning. Beat eggs vigorously with a whisk or fork for one minute. Turn on the stove and set to low to medium-low heat. Pour the eggs into the pan and stir to incorporate them with other ingredients.






Step 4: Use a spatula to scrape the bottom of the pan and turn the egg mixture to form soft curds. This will also prevent the eggs from sticking to the pan or forming a crust. When the eggs are almost set, turn off the stove and add the cheddar cheese.






How to make a breakfast burrito
Char tortilla over open heat to soften. Spread sour cream in the center of the tortilla and add scrambled eggs with cheese. Add cilantro and ranchera salsa or hot sauce. Roll the tortilla into a burrito and serve.

How do I make scrambled eggs with cheese?
Beat the eggs vigorously before adding them to a non-stick pan with melted butter. Stir and fold continuously with a rubber spatula until almost set and soft curds form. Remove pan from heat and add shredded cheddar cheese. Gently fold in the cheese to combine.
The cheese should be added when the eggs are almost set but still look moist or undercooked. At that point, you can turn off the heat and let the cheese melt into the eggs.

- Don’t skip beating the eggs for a full minute. Incorporating air into the eggs makes them nice and fluffy.
- If you like eggs with butter, you can melt a tablespoon (or more) of butter in the pan before adding the eggs.
- Vegetables of your choice can be added at the same time as the mushrooms.
